From its humble beginnings over 40 years ago as a small lobster fishing business conducted from Bridport by its founders Peter and Una Rockliff. The fully Tasmanian owned family business Petuna (producers of ‘Tasmanian Traditional Seafoods’ brand), has evolved into one of Tasmania’s largest seafood suppliers providing quality caught and farmed fish to supermarkets, restaurants and fish markets around the world.
Tasmania’s Macquarie Harbour is where these salmon are reared. Traditionally in Ireland the fillets are left in the lees of whiskey barrels to cure. These fillets undergo a variation of this method, resulting in succulent meat with just a hint of whiskey. Truly a unique texture and flavour.
