Description:
The Cantorel Bleu d’Auvergne cheese is made by Fromageries Occitanes in Saint Flour, the heart of the Auvergne region, following the traditional processes developed by Antoine Roussel over a century ago. The cheese making technologies have changed through the years but the basic principles of the Bleu D’Auvergne recipe remain the same. AOC status was granted in 1975.
A natural rind cheese with a minimum four week affinage, the pate is soft whilst also being slightly crumbly. The flavour is creamy, contains the spice of the blue moulds and has a salty, tart finish on the palate. This is a well balanced blue.
