Description:
Cropwell Bishop Creamery is a small independent family run business with origins dating back to 1847. Based in the lovely Vale of Belvoir on the border of Nottinghamshire and Leicestershire (two of the three counties where Stilton may be made) the creamery makes one of the most consistent award-winning Blue Stilton cheeses available.
The cheese needs a minimum aging of six months and can be matured up to eighteen months it should be crumbly yet firm enough to cut. Stilton has a dry brown rough rind around a creamy ivory paste with liberal blueing that spreads all the way to the edges. This cheese is full, rich and creamy with complex-flavours of honey, leather, tobacco and molasses.
Cropwell Bishop Organic Blue Stilton cheese was awarded the title of supreme champion at the British Cheese awards 2003. In addition the cheese was also awarded the title of Best Blue Cheese.
