Description:
Hand made in a similar way to their delicious creamy Stilton, Cropwell Bishop Creamery's Blue Shropshire benefits from all the experience and care which has made Cropwell Bishop cheese so successful. Those who try this gorgeous cheese will quickly find that the wonderful creamy texture of Cropwell Bishop Stilton has been maintained in Blue Shropshire and the flavour, though different, has a magic of its own. The orange colour comes from the addition of annatto, a natural food colouring.
Aged for a minimum of 10 weeks, Shropshire Blue is a made from pasteurized cows' milk and uses microbial (non-animal) rennet. It has been described as a cross between Stilton and Cheshire with Penicillium Roqueforti producing the veining. It is a firm cheese that has a deep orange-brown rind, sharp strong flavour and a slightly spicy aroma. It is slightly sourer, but sharper, than Stilton and generally creamier.
