Description:
Named after the Strzelecki Ranges, south of the Gippsland region of Victoria, this is a very special cheese from the Tarago River Cheese Company. Made from 98% fresh pure farmed goat’s milk, with only a minute amount of rennet and salt, Tarago Strzelecki Goat Blue is one of Australia’s greatest blues.
Only the finest quality milk is sourced for this unique cheese due to the highly volatile nature of goat’s milk. The rind is rather rustic with orange yeasts and mould becoming more evident as the cheese matures. Strzelecki is at it’s best from ten weeks affinage when the chalky curds have broken down to a soft, sensuous texture with clean, subtle goat flavours, and a full aromatic bouquet.
