Maffra Cheese Company is located on a dairy farm in the heart of Gippsland's dairy country. Using fresh milk provided by the farm's Holstein Friesian cows, Maffra's cheeses are handmade to traditional methods and carefully matured to their optimal age.

Matured for a minimum of 12 months, Maffra Mature Red Wax Cheddar has an extremely well balanced curd; a distinctive smooth full bodied flavour, finishing with slight citric and salty notes. The cheese is made using spring milk from a single herd of Holstein Friesians giving the cheese it’s rich yellow coloured interior and creamy texture. The curd structure is firm, but with extra aging will become crumbly.
