The recipe has changed over the years and is now producing a luscious and clean flavour typical of a Camembert style cheese. Made using milk from Jersey cows, and is similar in many ways to the benchmark Australian cheese Charleston Brie, although somewhat more delicate in flavour.
It has a pure white rind and a chalky core when young, as it matures the cheese becomes lovely and soft developing a custard like texture and full flavour, rich with a slight hint of mushroom and yeast on the palate.
