Description:
This Cheese has been given a French-Australian name due to its origin and development. Yarra Valley cheese maker Jack learnt how to make it with the fromagers of Le-Pic in the South of France. On return to Yarra Valley Dairy Jack changed a few steps to suit the characteristics of the Dairy and ‘Le Jack’ was born.
The cheese starts out with soft texture and subtle goat flavours. As it matures the delicate white mould breaks down the centre and produces a creamy texture. The flavour is gentle, nutty, and earthy with good length on the palate.
