Yarra Valley Yering is an interpretation of a classic Camembert style cheese. The flavours are very savoury, being mushroomy throughout and buttery near the core with slight acidity. The cheese also delivers slight sweetness when the pâté has matured to a soft and unctuous texture.
The cheese at six weeks has full maturity with tastes and aroma of mushroom and butter, in the classic Camembert style. The flavour is full-mouthed and has good length of palate.
