The Vosges Mountains are the backbone of Alsace and home to one of the smelliest cheeses on earth, Gerome or Langres, from the Lorraine region. The unique character of this full washed rind is attributed to the un-spoilt pastures of Alsace and the Vosgiennes cows, renowned for producing high-protein milk. The most notable characteristics of this cheese are the pungent aroma (don’t let the aroma put you off) and the soft smooth interior. When ripe the interior becomes straw coloured and the flavour; nutty and beefy. This Cheese also has tendencies to become sweet and almost yeasty with an intense spicy aromatic finish.
The pate is of a creamy consistency on the palate. The rind varies from a russet colour to a deep brick red as it matures and develops all the washed rind characteristics, with increased stickiness on the rind as it ripens. The rind is rubbed constantly over the 2-3 month affinage causing the development of varying aromas and intensity of flavour.
It is traditional to enjoy this cheese with boiled potatoes, cumin seeds (Munster au Cumin) and a glass of Alsatian wine such as Gewurtraminer, Rieslings, Beaujolais or any equally big red. It makes a great table cheese and is also suitable for grilling.
