Mt Vikos authentic Barrel-Aged Feta from Greece is very rare. It is made in a traditional manner by a small family dairy in central Greece from a blend of goat and 70 percent sheep milk. In this remote region the flocks of hardy sheep and goats still roam free grazing on the wild scrubby undergrowth and herb scented slopes for at least 9 months of the year.
The feta is moulded into large round forms, which is then stacked into 120 lb birchwood barrels. The barrel subtly influences the flavour and texture of the cheese through natural cultures growing in the grain of the wood, the wood also enables oxygen to reach the cheese inside as it matures. The cheese is aged in these wood barrels in underground cellars for four months, this allows it to become complex and rich in flavour.
The cheese is complex and creamy with a slightly tangy, clean, 'sweet milk' flavour, the consistency is firm but slightly crumbly.
