A middle-eastern style yoghurt cheese made from cow's milk originating from Egyptian times. Marinating in chilli, rosemary, garlic and olive oil gives this cheese a fresh, aromatic and delicate flavour. The longer the cheese in marinated in the oil the more intense the flavour becomes. Don’t discard the oil afterwards, as it takes on alot of the flavour of the other marinating ingredients and gives a great flavour to cooked meats, and tossed salads.
