Third generation cheese maker Matthieu Megard uses local organic milk from a single herd of Jersey cows to make his range of cheeses. Longing for the traditional cheeses of the French Alps where he grew up, Matthieu set out to make cheeses that reflected the local Victorian terroir whilst capturing the essence of some of France’s most loved cheeses. The result is a compact range of handmade organic cheeses; all rich and full of flavour.
This style of fromage frais or fresh cheese undergoes lactic fermentation before being hand-ladled into faiselles or baskets. The faiselle allows the cheese to be lifted from the container as it drains without too much disruption to the delicate curd.
Best eaten within days of production, Fromage Blanc has a milky flavour with a slight sour finish. It’s often enjoyed as a savoury dish with a dash of salt and black pepper or sprinkling of finely sliced chives, or as a dessert with jam, honey or fruit.
