Fresh curd taken from the cheese vat within an hour of production is used to make this delicate cheese. It is drained in cheese cloth before being packaged into containers for sale. The flavour is creamy and delicate with a subtle hint of citrus; the texture is soft and spreadable.

Traditionally served with fresh or poached fruits sprinkled with sugar. You can also spread on biscuits or crusty bread and serve with smoked salmon, or dress with olive oil and fresh herbs for an accompaniment to a tapas or antipasto platter.
