In 1956, a young Umberto Somma arrived in Australia with no more than a few shillings in his pocket, a 90-litre copper pan and a dream. The young man from a small Italian village of Pimonte in Napoli, set about to introduce Australia to his traditional Italian fresh specialty cheeses. Today, Umberto’s traditional Italian cheese making processes are the legacy that he has passed onto his two sons Joseph and Max, who now lead the Paesanella Cheese Manufacturers organisation. Their commitment to never compromise the quality, formula and vision of their product is testament to the true Italian cheese making way.

Bocconcini is Italian for “mouthful” and it refers not to its size but to its appetising appeal. Paesanella Bocconcini is soft white in colour, has a smooth elastic-chewy consistency and is stretchy when melted. It maintains its freshness being suspended in water, which allows the cheese to exhibit its delicate flavour; milky sweet with just a hint of salt. Perfect for the preparation of anti-pasta dishes, with salads, pizza’s and various side dishes to compliment mains.
