This is a fresh, handmade 100% goat cheese. The curd is delicately handled to create a satiny texture on the palate and a mild goat flavour with a slightly acidic finish. The chevre is marinated in grapeseed oil to retain the integrity of the best quality goat’s milk used and not to impose on the refined flavours of the end product. The marinade is infused with garlic, fresh thyme, bay leaves and lemon rind. A truly refined goat’s cheese with the trademark full-bodied creaminess of cheeses produced at the Tarago River Dairy.
