This is made almost entirely using lactic coagulation, which takes 24 hours, then carefully hand-ladled to avoid destroying the delicate curd matrix. It is a moist, mousse like, fluffy white curd with retained sweetness, a delicate balance of acidity and a mild, clean, creamy finish. The curd has an average fat content of 45%. The same curd is used in Edith’s goat cheese.
