Changes to Swiss government controls on milk and cheese production over the past several years has created an opportunity for smaller producers to develop new innovative cheeses, rich in regional character. One such dairy is run by the Stadelmann family. Second generation cheese maker Thomas Stadelmann has a passion for creating different cheeses, made in the ‘mountain’ style.

Blumenkäse is made using organic milk, the cheeses are turned and lightly washed throughout maturation, which helps to maintain moisture in the cheese and adds a hint of barnyard to the rind. A texture not unlike gruyere, it has grassy, fresh pasture notes balanced by the sweetness of creamy caramel.
