Description:
Produced only during the warmer months of May to October, this exceptional cheese comes from the high Alps of the Vaud, north of Lucerne. Its production is strictly governed by the Swiss AOC regulations. Morning milk is combined with the skimmed evening milk from the previous day and heated in a copper cauldron over a wood fire; the curds are set with the natural flora in the raw milk and moulded into large hoops. Matured for at least 14 months, each wheel has its own uniqueness with bold rustic and fruity flavours that come from the alpine pasture (or Alpage).
