Marcel Petite, one of the most respected affineurs of Comté in France, hand-selects wheels for maturation in their 19th century underground cellars at Fort Saint Antoine, high in the mountains that border France and Switzerland. These cheeses are carefully graded before, during and after maturation, during which time they develop a dense and smooth texture and a concentrated nutty flavour.

When selecting Comté, it’s important to note that quality and flavour vary between producers and most examples are sold simply on the basis of age. This is no guarantee of quality. Marcel Petite ‘Le Comté Bleu’ is for those who want a rich savoury flavour with a medium-long finish.
