Pata de Mulo is produced in the León region of North Western Spain.

Translated to mean ‘Mule Leg’ due to its flattened cylindrical shape, this ewes’ milk cheese is made using the milk of Churra and Castellana sheep, both renown for producing particularly rich, high quality milk.

Protected by a rough, green/grey rind, the fairly dry texture of the Pata de Mulo retains an unexpected creaminess.

Well rounded flavour is enhanced by slight acidity and saltiness. A subtle gamey aftertaste adds complexity and longevity to the palette.
