Description:
This exceptional raw milk mountain cheese is made by Michel Berouds in the Pays d’Enhaut region following similar principles to the more traditional L’Etivaz and Gruyère cheeses.
After salting, the young wheels are transported from the dairy to the nearby caves of ‘La Tigne‘. These caves are naturally cooler than a normal ageing room, which enables it to be ripened very slowly over 12 months. Its rustic earthy rind encases a yellow firm-dense, slightly pliable pâté that’s clean to snap, and breaks down nicely when chewed with some prickly acidity on the finish. Big on flavour: earthy, strong, some sweetness and fruit with subtle buttery spice, complex - great length of palate.
Looks really authentic, a crafted artisan product.
