Recent changes to Swiss government controls over milk and cheese production have created opportunities for many new small producers to develop new innovative regional cheeses.
The name of this unusual mountain cheese from the Stadelman family dairy in North East Switzerland literally means hayflower. This is a reference to the flowers and grasses collected from dry hay bales to coat the cheese as it matures over 6 months. These permeate the natural rind resulting in a cheese with distinct assertive floral qualities, subtle herbaceous flavours, and caramel middle palate - Incredibly well balanced. The pâté is slightly pliable, and rich in floral grassy aromas.
