This mature goat milk cheese has been launched under the “Tarago Heritage Hillcrest” range and was named after one of the founders and lifeblood of Tarago River Cheese Company, Alwyn Jensen.
The cheese is made in the traditional Gouda style (ie, a firm, cooked curd cheese) from early autumn goat’s milk and then matured for a minimum of 9 months. It has an average fat content of 32%. The cheese develops a well rounded, subtle goat flavour with a hint of spice & a creamy to firm texture on the palate. As the cheese ages the flavour is enhanced along with the firmness of the pate, enabling the cheese to be used as a grating cheese (an excellent alternative to Parmesan). It also has the depth required to achieve flavoursome results in cooking.
