Size/weight: A selection of regular, well-proportioned, ovoid and round baby olives averaging 800 fruits per kilogram. The flesh to stone ratio is 5:1. The skin is thin and elastic and is resistant to shriveling.

ALTO olives are fastidiously prepared with kiln dried sea salt and filtered rainwater and dressed with ALTO Lemon Infused Extra Virgin Olive Oil and Chardonnay vinegar.
These attractive mini-olives are ideally suited to service as an appetizer and accompanying aperitifs. The colours range from shades of bright to deeper olive green. The flesh is distinguished by its firm, crisp texture, a feature retained by careful processing.
On the palate these olives display intense natural olive flavour with green tomato undertones and a final hint of sweetness. The acidity and salt level is well balanced and there is no residual bitterness on the after palate.
