Size/weight: The fruit is medium size weighing 6 – 8 grams with 200 – 220 drupes per kilogram. The drupes are symmetrical and apple-shaped as indicated by the varietal name manzanilla, from the Spanish ‘little apple’. The flesh to stone ratio is 6.5:8.1 The skin is fine with an excellent texture.
Processing: Naturally fermented using kiln dried sea salt and filtered rainwater.
