Barambah Organics is a family owned company based in Brisbane Queensland, producing high quality certified organic products. The milk is sourced from their own farm located at Murgon in the South Burnett Region of South West Queensland, where the cows feed on a balanced pasture of perennial legumes and grasses under the vivid blue skies and River Red Gum trees skirting the banks of the Dumaresq River. The farm is organically managed by Ian and Jane Campbell with the upmost attention given to animal welfare and health, but also with a strong focus on the sustainability of the land.
Feta grew out of necessity long ago by shepherds needing to preserve the milk of their nomadic herds. Today this traditionally Greek (although there is some debate over where it originates) cheese is made in almost every country of the world. Barambah Organics Feta is made using cows milk, and cured and stored in its own brine. This white, crumbly, rindless cheese has a rich tangy-salty flavour and ranges in texture from firm to semi soft. Due to the cheese being stored in brine it does take on the salty characteristic of the brine, to reduce its intensity simply soak the cheese in water (or even better milk) for a few minutes, then dry well and use. This will draw some of the salt out of the cheese.
Feta is most commonly used in salads but has many uses; Tarts, pastries, pasta fillings, pie fillings, it can be used in almost any cooked dish that requires cheese, just bare in mind that feta will not melt like most other cheeses.
This cheese is Australian Certified Organic.
