Description:
Avruga is made by Spain's Pescaviar from sustainably-fished Atlantic herring which is smoked and infused with squid ink. Avruga herring black pearls have a soft, smoky flavour with citrus hints and can be used to create fabulous flavour accents in many dishes.
It has become a food of choice (as an alternative to caviar) for chefs and consumers concerned for the future of sturgeon, the source of prized beluga caviar. Sturgeon in the Black and Caspian seas and Siberia's wild rivers has been over-fished to satisfy demand for beluga, with the United States' Pew Institute for Ocean Science finding in 2005 that endemic sturgeon species has become critically endangered.
