In 2000 the Fremantle Octopus Co. was commenced by the Cammilleri family in Western Australia. The impetus for the development of the Western Australian octopus fishing industry came from the fact that the octopus is a predator of the rock lobster, a strong export earner for W.A. The Family developed a special "trigger' pot to catch and protect the octopus and also to lower the environmental impact on other species. The result is a product that is the envy of the world.

In the marinated version succulent pieces of octopus are placed in oil and vinegar with chilli, garlic, salt, parsley and oregano. It is great in antipasti and in salads or simply served on crusty bread.
