Description:
This exclusive caviar comes from ocean trout grown specifically for their eggs - They are not as a by-product of the fish-meat industry. The live mature fish are milked by hand, the eggs are then lightly brined and simply made into caviar. The product is unpasteurised and although this restricts the fresh shelf life to 14-21 days you are rewarded with the fresh taste, texture and separation associated with the finest of caviars.
A slightly smaller egg than Atlantic salmon caviar, ocean trout caviar shows a bright orange colour with an identifiable darker orange yolk. Each egg is individual and has great clarity and shine. Due to careful handling and processing, the flavours are well balanced between sea and salt and integrate well with more robust accompaniments. This Caviar has a texture that resists slight pressure and then pops, releasing its fresh sea-salt flavours.
