Conservas Ortiz was founded more than 100 years ago and is established in a small fishing village located in the North of Spain, Ondarroa, on the Cantabrian Coast on the Bay of Biscay. They practice historic fishing methods and ensure traditional practices are upheld in every stage of production of their products.
Ortiz anchovies are line caught daily with live bait during the European spring. As soon as they are brought back to port their heads are removed and they are laid in barrels separated by layers of salt and cured 6 months. Once mature they are then cleaned, filleted and laid gently side by side in the tins with olive oil. Every process is meticulously done by hand.
Ortiz Anchovies are beautifully plump and are the go-to choice of chefs due to their quality, texture and clean fresh flavour.
