Located on the slopes of Spain’s highest mountain Mulhacén, in the mountains of the Sierra Nevada, Trevélez is known as the highest village in Spain sitting at 1476m above sea level. Ham has been cured here since 1862.
This privileged location, with natural drying facilities, and an exclusive microclimate, allow the ham to develop microbiological cultures which add to its unique character and taste. By law to be stamped ‘Trevelez’ these hams must be made at altitudes greater than 1200m. There are no nitrates used in the curing only sea salt and mountain air. The pigs are small to medium sized Duroc or Landrace breed, specially selected and fed an exclusively vegetarian diet. Air dried naturally for between 14 and 30 months, the leg is boneless with a soft light coloured flesh and a nutty sweet flavour. This is due to the fat content of the pigs chosen, the lack of nitrates and the sparing use of sea salt.
