Stephane Langlois makes all his own small-goods from traditional French recipes
he brought with him to this country. AOAP has worked with Stephane for
many years, making a selection of his finest products available to the Sydney

are rich and flavourful with an excellent balance of seasoning. The pork meat
is blended with fresh garlic, sea salt and black peppercorns then cured in
an all-natural beef casing. The natural fermentation of the meat produces a
peppery, lightly sour taste that is pleasant and clean.
