Petuna Smoked Atlantic Salmon are grown in the cool, clean wilderness waters of Macquarie Harbour on the edge of Tasmania’s World Heritage area where the fish flourish in the mix of tannin-rich fresh river water and cool sea water from the Southern Ocean. This unique environment encourages disease-free growth all year round.
Traditionally in Ireland, whiskey cured salmon is made by leaving salmon fillets in the lees of whiskey barrels to cure. Petuna’s fillets undergo a modernised variation of this method, resulting in succulent meat with just a hint of whiskey. Truly a unique texture and flavour.
