Pronounced; ‘Ann-Doo-Wee’. This is a traditional Louisiana style hot smoked pork sausage (we call it American Chorizo as an easy explanation.)  Earthy flavour with a touch of heat, spices include; thyme, mustard seed, chilli, nutmeg and allspice. Eat straight from the pack or cooked. Serve cold on a charcuterie plate, fried with caramelised onions or used as the base for a soup.
