Petuna salmon comes from the pristine waters of Macquarie Harbour, Tasmania. This natural environment with icy cold water and plenty of food produces brightly coloured firm fleshed fish.
Gravlaks is cured rather than smoked. The cure is made of sugar, salt, pepper and dill with a little brandy for flavour. This produces a Salmon that is lighter or more “cooked” in colour and the texture is a little less firm. The addition of herbs and sugar in the cure makes the Gravlaks a really interesting ingredient due to its sweeter, more herb accented flavour.
