Profile

This cheese is a semi-hard cow’s milk from the village of Asiago Veneto Italy. There are two distinctive types of Asiago (d’Allevo and Pressato). The more traditional of the two being the d’allevo – it’s colour is light beige, the interior has small holes through the pate, the flavour is mild and lactic. Aged Asiago 12 months or older will develop a grayish rind with a milky finish. This cheese is perfect for a cheeseboard or to use as an ingredient.
