Description:
Produced from highly acidic, pasteurised milk of Bruno Alpina and Pezzata Rosso red cows, Castelrosso is a unique cheese, rarely found in stores. It is a close relative of the Castelmagno cheese, also produced in the Piedmont area of Italy, but has a character all of its own.

It is produced in wheels approximately 3kg in size and matured in underground cellars for up to 3 months. Its moist rind attracts an array of different moulds, white and yellow moulds being the most prominent. The pâté is bright white in colour, firm and crumbly textured, with a melt in the mouth quality when chewed. The flavour is mildly rich with a salty soft tang and fruity-floral overtone that lingers after eating.
