Description:
Dante cheese is handmade at Cedar Grove in small batches, using principles adapted from a traditional Gouda recipe.
After salting, the rind of the young wheels is coated to discourage mould growth during affinage. Most Dante is aged for just 6 months but this ‘custom-made‘ cheese has been graded for extra ageing. After eighteen months on cedar branches in the dairy‘s fresh air aging rooms, it’s concentrated golden slightly flaky-crumbly texture, has developed an exceptional sweet nutty caramel finish.
