Description:
Mahon is the capital of the rocky island of Menorca, the most northerly of the Balearic Islands off the coast of Spain. It is also the name given to all cow’s milk cheeses produced there, ranging from young to very mature, the rinds are often rubbed with olive oil and paprika. The milk for the cheese is supplied from over 600 small farms to then form the traditional square shape that is so distinctive.
After ripening on wooden shelves for up to 3 months the cheese develops a slightly sweet aroma and mild buttery flavour which improves with age. Mahon is traditionally eaten drizzled with olive oil, black pepper and fresh chopped Tarragon. Mahon is a hard cheese and is also used for grating over pasta and of course as a table cheese.
