This is a classic ewe’s milk cheese from the French mountain island of Corsica. It is made to a traditional recipe that has survived since the first millennium. Using  traditional baskets this whole milk cheese is drained for three days then salted and covered with a coating of wild herbs, all picked from the local maquis. 


Fleur du Maquis develops a peculiar look with its herb covered rind with patches of white, grey and blue mould fighting for supremacy. It has a firm springy texture when young, softening to a flowing consistency at its peak around its rind. In the mouth flavours go beyond the obvious herbaceous, developing nuances of hazelnuts and fruit, along with a hint at olives. 


This cheese goes extremely well with the savoury flavours of olives, tomatoes and peppers rather than the traditional fruit accompaniment.
