Description:
Auricchio Pecorino Sirbone Crotonese is a small semi-hard sheep’s milk cheese that is aged for a minimum of three months in wicker baskets. Produced from January to June when the sheep’s milk of Sardinia is at its peak in flavour and yield, the cheese develops a pleasantly subtle yet sharp taste with a faint citrus zing and overall nutty-creamy flavour. The pâté is dense and smooth in the mouth with slight elasticity. It makes for a fine table cheese and is also firm enough to be grated.
