IL Forteto (the fort), is a commune tucked away in the Muggelano Valley, 30 kilometres from Florence.
This popular sheep's milk cheese is available in a variety of ages, from about a month to a year or more. Pecorino Toscano Stagionato DOP is aged for a minimum of four months. The pâté is a yellowish white colour and firms up dramatically the longer the cheese is aged. The flavour is sweet and savoury, delivering a complex layered flavour profile; tangy, savoury, herbaceous, and slightly salty elements, with lingering notes of toasted nuts and alliums. It's a great example of how delicious a sheep's milk cheese can be, and should be given the spotlight on a cheese plate.
