Description:

The Perenzin family dairy has been making artisan cheeses for four generations. They practice a unique blend of modern, innovative cheese making, whilst remaining true to local history and traditions. All processes are supervised directly by Carlo Piccoli, a seasoned cheese maker with over twenty years’ experience in the dairy industry. 

 

Ubriaco translates to ‘Drunken’, a common group name for cheeses cured in wine and must. It’s a cheese making process inspired by the centuries-old custom of hiding cheeses in fermenting grape must to conceal them from raiders in time of war... or from the master’s accounting ledger.

 

Ubriaco al Traminer is a goat’s milk cheese of semi-hard consistency that is uniformly textured with the occasional tiny hole scattered through its pâté. It is steeped in Traminer Grape marc for 10 days imparting a floral wine-like flavour with grape residues clinging to its characteristically dark rind, creating a striking visual element as a platter or table cheese.
