Description:
This traditional artisan cheese was virtually extinct until its renaissance in the early 1980’s by a small number of (mostly new) cheese makers, dedicated to revitalizing the traditional cheeses of Spain.
Made from the milk of Murciana and Granadina goats, Garrotxa has a natural rind covered in a blueish-grey velvety bloom. Its ivory-white paté, darkening slightly towards the rind, is compact with irregular small holes, providing a smooth and supple texture. Flavours are mildly herbal, nutty and earthy, with a pleasant lingering goaty citric tang.
Garrotxa is a wine-friendly cheese and pairs well with most red wines.
