Description:
Made in the hot, arid, Murcia region on the southeast coast of Spain, Murcia al Vino is made using only milk from the Murciano granadina goat. It is a relatively modern variant of the traditional semi-cured cheeses of the area. It is matured with a natural rind for a minimum of 45 days, during which it is washed with local red wine which is very high in tannin. Upon reaching maturity the cheese has a distinctive colour and floral aroma with a mild fruity flavour and smooth, buttery texture.
