A robust cheese, made with full fat devon milk, it is muslin wrapped and allowed to mature on beech or poplar cut from the estate woodlands for 18 months giving this intense cheddar its hallmark rind and outstanding depth of flavour.
The cheese is intense and tangy, with hints of almonds and hazelnuts, with a searing acidity.
