This is a traditional English farmhouse cheese it has a firm body and a close, flaky texture, the flavour is delicately sweet and improves with age. There is a mere suggestion of green-grass bitterness behind the more distinct butterscotch and nut flavours.
The cheese is coloured with natural annatto (the berry of a South American tree). It is left to mature for six to nine months, it can be used as a table cheese and is perfect for grilling or grating.
