Pecorino Moliterno is made in the Basilicata region of Italy and to the people of the region it is somewhat of a flag of identity. It is made exclusively from full fat sheeps milk and is produced between December and July. It is formed in a basket, with a cylindrical shape. Salting takes place when dry, followed by a maturation period of atleast four months.
Pecorino Moliterno is an excellent table chesse and is also very good for grating (according to maturation). The flavour is aromatic and subtly spicy.
