Saracino, a Riserva Esclusiva Auricchio cheese, is a caciotta made from pasteurized whole sheep’s milk that is aged for about four weeks. Cylindrical in shape, it weighs between 1.8 and 2 kg. Its rind has a woven basket pattern. Its straw yellow interior is compact and has just a few tiny holes, and its flavor is mild and aromatic.
